More Easy Meals: Lazy Baked Mac 'n Cheeze

On days that I'm eating alone, I can't justify cooking extravagantly. PLUS, I've been pretty lazy every since I started working this side job (of making websites). So, if you're looking for a meal that's easy but a little more interesting that just a box of macaroni, try this.

Ingredients:
1 box Road's End Mac 'n Cheese - any style you prefer, they're all good
** They carry this at Whole Foods, Clintonville Community Market, and probably that beast of store - Market District
1/2 cup of Italian seasoned bread crumbs - read labels, some brands have dairy in them
Various vegetables - I like broccoli and onions
Optional: Add a dash or two of chipotle pepper when you add the vegetables.
Optional: Microwave some Field Roast sausages, chop them, and add them to the mac when you add the vegetables.

- Preheat oven to 350 F
- Make macaroni as per box instructions. I always add the optional earth balance.
- Precook your veggies in a saute pan with a teaspoon olive oil and maybe some garlic - or just steam them in water if you're trying to be healthy.
- Combine macaroni and veggies and other optional items (if using) in a casserole dish. Cover with bread crumbs.
- Bake for about 10-15 minutes, turning the broiler on for the last minute. Watch so you don't burn it.
-Remove, cool, and eat itttt!!
